Thai Style Chicken Wings

Chicken wings marinated in a thai style marinade consisting of peanut butter, curry powder, salt, pepper, lemon juice, brown sugar, soy sauce, fresh ginger, garlic and hot sauce.
Ingredients -
3 pounds Chicken Wings
1/4 cup Peanut Butter
1 tablespoon Curry Powder
1 teaspoon Salt
1 teaspoon Pepper
1/8 cup Lemon Juice
2 tablespoons Brown Sugar
1/4 cup Soy Sauce
2 tablespoons Fresh Ginger, grated
3 Garlic Cloves, minced
2 tablespoons Peanut Oil
2 teaspoons Asian Style Hot Sauce
 
Preparation:

1. Cut wing tips off and discard. Separate wings into pieces at elbow joints.

2. Combine peanut butter, curry powder, salt, pepper, lemon juice, brown sugar, soy sauce, fresh ginger, garlic cloves, peanut oil, and hot sauce.

3. Place wings into zip lock bags. Pour marinade over wings. Seal bags, and refrigerate 4 hours to overnight.

4. Grill wings over a medium-hot grill for about 8-10 minutes. Turn and grill other side.

5. Baste once or twice during cooking with remaining marinade.

6. Discard excess marinade.

7. Wings should be crispy outside, cooked through and no longer pink inside.

Put Out Grease Flare-Ups
A spray bottle filled with water comes in handy to put out flare-ups when grease hits hot coals.

Grill Marks
Set chicken on the grill diagonally to the grill rack. After it has cooked a few minutes, move the chicken and set it back down at an angle that produces the distinctive diamond grill mark. It takes some practice.
