Spicy Buffalo Wings

Chicken wings based with hot pepper sauce with blue cheese and red pepper flake highlights. Grilled over open coals until crispy and cooked through.
Ingredients -
5 pounds Chicken Wings, separated at joints, tips discarded
4 cups Vinegar-Based Hot Pepper Sauce
1/4 cup Butter
6 tablespoons Blue Cheese Salad Dressing
3 Pickled Cherry Peppers, thinly sliced
1/2 Onion, finely chopped
1/2 teaspoon Freshly Ground Black Pepper
1/2 teaspoon Crushed Red Pepper Flakes
Hickory Wood Chips
 
Preparation:

1. Preheat grill to medium heat.

2. Soak hickory wood chips in water.

3. Add hot sauce, butter, blue cheese dressing, cherry peppers, onion, black pepper, and red pepper flakes to grill safe saucepan.

4. Stir to combine. Place on grill rack. Simmer and cook 20 minutes.

5. Sprinkle hickory chips over coals.

6. Place chicken wings on grill. Cook 30-40 minutes, basted with sauce frequently during final minutes of grilling.

7. Wings should be crispy outside and no longer pink inside.

Grilling Chicken
When grilling, allow 30 minutes for charcoal briquettes to heat to gray ash stage. (mesquite charcoal may require a few minutes more).

Grilled chicken is done when a meat thermometer registers 170 to 175 F, and juices run clear when pierced with a fork.
